Curry Chickpea Salad

Easy peasy and sweet & savory! Enjoy over greens, in a sandwich, or as is.

 

Chickpea Salad Recipe

Ingredients:

  • 1 (15 oz) can chickpeas (I used Eden Organic Chickpeas)

  • 1/4 cup + 2 tbsp mayo (I use Trader Joe's mayo)

  • 1/2 tsp curry seasoning

  • Pinch of flaky sea salt (I used Slack Tide's Upta Camp Applewood Smoked Sea Salt)

  • Freshly cracked black pepper, to taste

  • 1 celery stick, finely diced

  • 1/4 cup finely diced red onion (or to taste)

  • 1/2 Honeycrisp apple, finely diced

  • Juice of 1/2 lemon

  • Optional: sunflower seeds for extra crunch

Instructions:

  1. Drain and rinse the chickpeas. Use a fork or your hands to mash them slightly, leaving some texture.

  2. Add the mayo, curry seasoning, sea salt, pepper, and lemon juice. Mix well.

  3. Stir in the diced celery, red onion and apple. Mix until well combined.

  4. If desired, sprinkle sunflower seeds on top for added crunch.

  5. Serve chilled as a sandwich filling, on top of fresh greens, or on its own!
